Macaroni with Ham and Cheese

This crunchy pasta dish is so easy to make and tastes really good!  It’s a different take on the old favourite Macaroni Cheese – not so rich because there is no cheese sauce – just cheese!  You can really add anything you fancy to this dish – I often add a punnet of chopped button mushrooms.  Another nice variation is stirring through two or three chopped hard-boiled eggs – depends what you have in the fridge! 🙂

Ingredients:

1 250 gram packet of macaroni – I use elbows

3 ham steaks

1 tablespoon of olive oil

1 onion finely chopped

1 clove of garlic – grated

1 teaspoon Sambal Oelek  (A paste made from ground red chillies – I use Conimex brand)

1/2 teaspoon of freshly grated nutmeg

salt & pepper to taste

4 cups of grated cheese

Panko crumbs for the topping

Method:

Boil the macaroni as per instructions on the packet until just el dente

While the pasta is cooking, fry the onions, garlic & chilli paste in the olive oil

Chop the ham steaks into small cubes and toss in with the onion mixture

Season with the nutmeg, salt & pepper to taste

When pasta is ready, drain and mix thoroughly with the ham and onion mixture

Add in the grated cheese and stir though to combine

Tip this into a casserole dish and sprinkle generously with Panko crumbs

Bake at 200c (fan forced) for around 20 minutes or until crumbs are nice & golden

Hot Tamale (Beef with Macaroni)

 This is a recipe my mother has been making for about 40 years…  We don’t remember why it’s called Hot Tamale – that’s been lost to history –  it’s not Mexican Tamale – but I can tell you this is delicious and easy and everyone just loves it!  If I bring a tray of this to a party it’s always the first thing gone…

Variations: You can also add in grated vegetables such as zucchini, parsnip and carrots.  Add mushrooms and spinach as well.  If you top it with a thick cheese sauce before baking it is a very decadent dish indeed…  The possibilities are endless…  

Ingredients:

large packet of pasta, eg macaroni, elbows etc. (I used small penne last time)

grated parmesan cheese

500 g good quality mince meat (I use diet mince)

2 onions

garlic

chilli to taste (I use Sambal Oelek)

tin of crushed tomatoes

2 tins tomato soup (I use Campbell’s)

olive oil

salt & pepper to taste

2 teaspoons sugar

Method:

Fry the onion, garlic & chilli

Add the mince meat, breaking it up while browning it.

Add the undiluted tomato soup

Add the seasonings and sugar.

Simmer while the pasta is cooking

Cook the pasta until just al dente, and mix together with the meat sauce

Pile into a casserole dish (I usually manage to get two dishes out of this much and freeze one)

Sprinkle with lot’s of parmesan cheese and bake at 200c for about 20-30 minutes until cheese is browned.

Serve with crusty bread
