Saute in butter until soft. Add 1/2 cup of sugar and cook slowly until caramelised.
Add 1/3 cup of balsamic vinegar and cook slowly for about 30-40 minutes until it has reduced down and the onions are soft and it looks lovely and sticky.
Season to taste with sea salt.
That’s it! So easy – keeps in the fridge for a week and is delicious hot or cold.
